Ingredients:
3 cups lukewarm water
6.5 cups all purpose flour
1 package of regular or quick active dry yeast
1.5 tbsp kosher salt
Process:
1. In large bowl mix water, salt, and yeast together.
2. Add flour and stir together gently with wooden spoon.
3. Cover with lid (not airtight) and allow dough to rise for 2 hrs at room temp.
4. Refrigerate for 3 hours (Dough will keep for 14 days while refrigerated)
5. When ready to bake, separate a grapefruit sized portion and shape as desired. DO NOT OVER WORK THE DOUGH HERE! Shaping should take no more than 30 seconds.
6. Place on baking apparatus that has been lined with parchment paper or treated with cornmeal, cooking spray, etc. so as to prevent sticking.
7. Let dough rest uncovered for 60 minutes at room temp.
8. 30 mins prior to baking preheat oven to 450 Fahrenheit. Place small broiling pan with 1 cup of water on lower rack at this time.
9. Just before baking dash top of loaf with flour and use serrated knife to make 0.25 inch cuts in the dough.
10. Bake for roughly 30 mins or until desired crust is achieved.
