If you’re ever in need of something really tasty, really fast, really easy, and really healthy, give some rendition of this a shot. I’ve used all sorts of different leafy greens, such as escarole, kale, spinach, and chard. For the beans, I think either white kidney or great northern go best, but I’ve also used garbanzo beans and red kidney beans as well in the past with good success. This one though uses Trader Joe’s Kale, Trader Joe’s Great Northern beans, some Trader Joe’s Mushroom Medley, a little sliced up onion, some minced garlic, Trader Joe’s Extra Virgin Olive Oil, salt, pepper, and Italian Seasoning. Just combine all the ingredients and steam the ever living crap out of it. It’s really good.
